2 lbs small red potatoes | |
3 tbsp olive oil | |
5 cloves garlic, minced | |
1 tbsp dried oregano | |
1 tbsp dried basil | |
1 tsp salt | |
1/2 tsp black pepper |
1. | Preheat the oven to 425°F. |
2. | Wash potatoes and pat them dry. |
3. | Cut the potatoes in half or quarters depending on their size. |
4. | In a mixing bowl, combine olive oil, garlic, oregano, basil, salt, and black pepper. |
5. | Add the potatoes to the mixing bowl, and toss until coated with the seasoning mixture. |
6. | Arrange the potatoes in a single layer on a baking sheet. |
7. | Bake for 25-30 minutes or until golden brown and crispy. |
