1 onion , very finely chopped

4 chicken thighs , cut into chunks
4 tomatoes , cut into chunks
80 g spinach , roughly chopped

4 cardamom pods , squashed
1 cup basmati rice

Instructions

1.Heat 2 tablespoons of cooking oil in a large saucepan and add finely chopped onions, ginger, green chilies, and garlic cloves. Fry for 5 minutes or until onions turn golden brown.
2.Add chili powder, ground cumin, and turmeric to the pan. Fry the mixture for 2 minutes.
3.Add chicken chunks to the saucepan and fry for 5 to 8 minutes. Coat the chicken cubes well with the mixture.
4.Add chunks of tomatoes and spinach to the pan, stirring occasionally for 10 minutes, or until the chicken is cooked.
5.Cook basmati rice with 1 teaspoon of butter or oil, and 4 squashed cardamom pods.
6.Serve the garlic chili chicken on a bed of freshly cooked cardamom rice. Enjoy!
