Ingredients

3/4 cup gruyere cheese
5 tablespoons butter , unsalted
1 1/2 cups green garlic , white and light green parts , chopped
1 cup milk
3/4 cup water
4 eggs , large , separated
5 tablespoons parmesan cheese , grated
1 teaspoon lemon juice
1/4 teaspoon salt
pepper
1/4 teaspoon thyme , chopped
1/4 teaspoon parsley , chopped
2 cups chanterelle mushrooms , and
morel , brushed clean
6 tablespoons olive oil
2 teaspoons balsamic vinegar
2 cups arugula

Instructions

1.Preheat oven to 375°F and thoroughly grease the ramekins with butter
2.In a pan, melt the butter and add green garlic. Cook for 2-3 minutes until translucent.
3.Add milk and water to the pan and bring to a gentle simmer.
4.Slowly add in the grated gruyere cheese to the pan and stir to incorporate.
5.In a separate bowl, whisk egg yolks with lemon juice, salt and pepper and add to the pan. Mix until combined.
6.Whip egg whites in a separate bowl until stiff peaks form.
7.Gently fold in the egg whites to the mixture and add chopped parsley and thyme.
8.Pour mixture into the ramekins and bake for 20-25 minutes or until they rise and are golden brown.
9.While the souffles are cooking, chop the chanterelle mushrooms and morels coarsely and sauté in olive oil. Deglaze with balsamic vinegar.
10.Arrange arugula on plates and put soufflés on top. Serve with sautéed mushrooms and morels.
