Ingredients

2 cups arborio rice
1 onion
2 vegetable bouillon cubes , dissolved in 1 ltr hot water ( you can always add more water if you need to . )
1 bulb of garlic , minced ( you can use less if you like , I like my food really garlicy )
2 tablespoons soy sauce
1 teaspoon chili flakes
1 tablespoon basil ( fresh or dried )
1 cup bell pepper ( any colour , cut into little squares )
1/2 cup cheddar cheese
2/3 cup passata ( or any tomato sauce . Even tomato soup would do )
2 tablespoons olive oil
salt and pepper

Instructions

1.In a large pan, heat the olive oil over medium heat.
2.Add the minced garlic and chili flakes, and cook for a minute or two until fragrant.
3.Add the arborio rice and stir well to coat in the oil and garlic mixture.
4.Pour in a cup of the vegetable broth and stir continuously until the liquid has been absorbed.
5.Continue adding the broth in 1/2 cup increments, stirring frequently and allowing the liquid to be absorbed before adding more.
6.When you've added about half of the broth, add the bell peppers and basil to the pan and continue to stir.
7.When the rice is cooked, but still has a bit of bite left in it, add the passata and cheddar cheese. Stir well to combine and heat through.
8.Season with salt and pepper as needed and serve.
