1 head of lettuce | |
1 cucumber | |
1 bell pepper | |
2 tomatoes | |
1/2 red onion | |
1/2 cup chopped fresh parsley | |
1/4 cup olive oil | |
3 tablespoons lemon juice | |
1 teaspoon honey | |
Salt and pepper to taste |
1. | Wash and chop the lettuce, cucumber, bell pepper, tomatoes, and red onion. |
2. | In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to make the dressing. |
3. | In a large bowl, mix the chopped vegetables with the parsley. |
4. | Drizzle the dressing over the salad and toss to coat. |
