3 small eggplants

1 cup panko breadcrumbs or 1 cup regular cracker crumb
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
7 ounces spaghetti or 7 ounces angel hair pasta
1 1/2 tablespoons olive oil
28 ounces spaghetti sauce
1 cup shredded parmesan cheese

Instructions

1.Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
2.Slice the eggplants into 1/4-inch rounds.
3.Set up a dredging station with three shallow bowls. In the first bowl, add flour. In the second bowl, whisk together the egg and water. In the third bowl, mix together the breadcrumbs, grated parmesan cheese, salt, pepper, and garlic powder.
4.Dredge the eggplant slices in the flour, then dip in the egg mixture, then coat in the breadcrumb mixture.
5.Heat the olive oil in a large skillet over medium-high heat. Working in batches, fry the eggplant slices on both sides until golden brown.
6.Spread a small amount of spaghetti sauce in the bottom of a 9x13 inch baking dish. Layer the fried eggplant slices on top of the sauce, then pour remaining sauce over all. Sprinkle the shredded parmesan cheese on top.
7.Bake for 25 minutes or until the cheese is melted and bubbly.
