Ingredients

4 boneless skinless chicken breasts
1 tablespoon herbes de provence
2 cloves garlic
2 onions
2 courgettes
1 red pepper
1 green pepper
1 yellow pepper
6 tablespoons olive oil
1 can chopped tomatoes
salt and black pepper
2 tablespoons chopped fresh parsley
basil leaves ( to garnish ) ( optional )

Instructions

1.Preheat oven to 200ºC (180ºC fan).
2.On a large baking tray, add the chicken breasts.
3.In a small bowl mix the herbes de provence, salt, black pepper, minced garlic and 4 tablespoons of olive oil. Brush evenly over the chicken.
4.Roast for about 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
5.Meanwhile, chop the onions, courgettes, red and yellow peppers into pieces of similar size. Heat 2 tablespoons of olive oil in a large pan. Add the vegetables, stir-fry for 5 minutes, then add the chopped tomatoes. Simmer for 10 minutes, until the vegetables are softened and the sauce has thickened.
6.Serve the chicken on a bed of the vegetables and sprinkle with chopped parsley and garnish with basil leaves (optional).
