Garden calzones are a healthier and more nutritious alternative to traditional pizza. They are made with a variety of fresh vegetables that not only provide great flavor but also a generous dose of vitamins and minerals. The dough is lower in fat and sodium compared to regular pizza dough, which appeals to those who are health conscious. It is also a great way to use up leftover vegetables in the fridge. These calzones are perfect for a casual dinner with family and friends or as a tasty lunch option.

Instructions

1.Preheat your oven to 375°F/190°C. Coat a baking sheet with cooking spray and set aside.
2.In a large skillet, heat cooking spray over medium-high heat. Add the mushrooms, zucchini, red and yellow bell pepper, green onion, garlic powder and Italian seasoning. Cook, stirring occasionally, for about 5 minutes or until the vegetables are tender. Set aside.
3.Unroll the pizza dough onto a floured surface, then cut it into 4 equal sections. Roll or press each section into an oval shape, approximately 6 inches in diameter.
4.Spoon a tablespoon of spaghetti sauce in the center of each oval shape, leaving about 1/2 inch around the edge. Top each with 1/4 of the vegetable mixture. Sprinkle with 1 tablespoon of light mozzarella cheese on each calzone.
5.Fold the dough over the filling, pressing the edges together. Use a fork to press down and seal the edges, then poke several holes in the top of each calzone to allow steam to escape during baking.
6.Brush the tops of the calzones with the beaten egg white.
7.Bake for 20-25 minutes, or until the crust is golden brown. Let cool for a few minutes before serving.
