Ingredients

1 can garbanzo beans , rinsed and drained
3 egg whites
1/4 cup skim milk
2 teaspoons vanilla extract

1/4 teaspoon cream of tartar

Instructions

1.Preheat your oven to 350 degrees F (175 degrees C).
2.Grease a 9-inch cake pan with non-stick cooking spray.

4.Add sugar, baking powder, ground cinnamon, and grated lemon peel. Pulse until the ingredients are well combined.
5.Stir in raisins.
6.Pour the batter into the greased cake pan.
7.Bake for around 35-40 minutes or until the cake is a golden color and a toothpick comes out clean.
8.Meanwhile, whisk cream of tartar, sugar, and cinnamon in a small bowl until frothy.
9.Remove the cake from the oven and brush the sugar mixture over the surface.
10.Place it back into the oven and bake for another 5 minutes or until the sugar topping is golden brown.
11.Remove from oven and let it cool on a wire rack.
