Ingredients

1 1/2 tablespoons olive oil
1/2 large onion , diced
3 cloves garlic , minced , or more to taste
2 tomatoes , divided
2 cans garbanzo beans , drained
2 tablespoons lemon juice , divided
2 teaspoons olive oil , divided
1 1/2 teaspoons butter
2 zucchini , chopped
1 yellow squash , chopped
1 green bell pepper , diced
salt and ground black pepper to taste
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon paprika
6 flour tortillas
1/2 cup shredded Cheddar cheese ( optional )
1 dash hot sauce , or to taste ( optional )

Instructions

4.Cook and stir the garbanzo bean mixture until heated through, about 5 minutes. Transfer garbanzo bean mixture to a bowl.
5.Melt butter with remaining 1 teaspoon olive oil in the skillet until butter is foamy.
6.Cook and stir zucchini, yellow squash, and green bell pepper in the foamy butter mixture until vegetables are tender, about 10 minutes.
7.Sprinkle salt, black pepper, cumin, chili powder, and paprika over the vegetables. Stir to combine.
8.Add garbanzo bean mixture back to the skillet and stir to combine.
9.Heat tortillas in the microwave for 10 seconds, or until soft.
10.Spoon garbanzo bean and vegetable mixture into tortillas. Sprinkle each burrito with Cheddar cheese, diced reserved tomato, and hot sauce. Fold opposite sides of each tortilla toward the center, then roll edges up around the filling to form a burrito.
