1 eggplant , chopped
2 tablespoons fish sauce
1 tablespoon sugar

1 cup coconut milk

4 fresh lime leaves , im using juice
2 cups rice
8 green onions , chopped
4 basil leaves , chopped

Instructions

1.In a large pot or wok, heat the oil over medium-high heat.
2.Add the red curry paste and fry until fragrant.
3.Add the chicken breast and cook for 5 minutes until browned.
4.Add the green beans, eggplant, and lime leaves/juice and stir.
5.Pour in the coconut milk, sugar, and fish sauce, and bring it to a boil.
6.Turn down the heat to low, cover and let it simmer for 20 minutes.
7.Once the vegetables are softened, remove from the heat and add the green onions and basil leaves.
8.Serve hot with steamed rice.
