Ingredients

1/2 tablespoon chili oil
300 g chicken thigh fillets , diced
1 tablespoon dried red chili ( or fresh but the restaurant uses dried )
2 green onions , chopped
1/2 tablespoon sugar
1 teaspoon grated ginger
2 garlic cloves , chopped
2 -6 tablespoons stock ( the recipe states several ) or 2 -6 tablespoons water ( the recipe states several )
1 tablespoon vinegar
1 tablespoon Chinese wine
1/2 tablespoon light soy sauce
1/3 cup cashew nuts ( or peanuts )
Gang bao chicken is one of the most famous Sichuan dishes in China. It is known for the unique flavour that comes from the use of Sichuan pepper corns. Gang bao chicken translates literally to 'dry-fried chicken with chillies'. Despite its spicy nature, the dish has a nice balance of sweet, tangy, savoury and heat. The inclusion of cashew nuts provides added texture to the dish, which complements the juicy, tender chicken and the spicy, tangy sauce. It's a great one-pan dish that you can whip up in no time at all, making it perfect for a weeknight dinner.

Instructions

1.Heat a wok, and add the chili oil.
2.Add the chicken and stir fry until it turns white. Then, remove from the wok.
3.Add chili, ginger, garlic and stir fry for around 10 seconds.
4.Add the green onion and stir fry for another 10 seconds.
5.Return the chicken to the wok and stir fry for a further 30 seconds.
6.Add the sugar, stock, vinegar, soy sauce and Chinese wine and continue to stir fry for a further minute.
7.Finally, add the cashew nuts and give it one final stir.

PROS

This dish is a Chinese take on Kung Pao chicken, with fewer ingredients and a milder taste.
It’s really quick and easy to make, and the cashew nuts add a lovely crunchiness to the dish.

CONS

This dish can be quite spicy with the combination of red chilli and dry chilli flakes.
If you’re not a fan of spice, you could reduce the amount used.
