Ingredients

2 cups dried pinto beans or 2 cups any white beans
6 cups mexican-style hominy
3 lbs stew beef chunks
1 1/2 gallons water
1 onion , cut in half
1 diced tomato
1 fresh green chile
6 garlic cloves , chopped
2 cups tomato sauce
2 bunches kale or 2 bunches any greens
2 bunches cilantro , chopped
2 tablespoons chicken bouillon granules
salt and pepper
Gallina Pinta is a traditional Ecuadorian dish that translates to 'painted chicken,' but does not actually contain any chicken. Instead, it features white beans, hominy, beef, and plenty of spices, herbs, and vegetables to give it a rich, complex flavor. This dish is often enjoyed as a main course, accompanied by rice, avocado, or salad. The long cooking time is necessary to fully blend the flavors and create a tender, flavorful dish that is sure to warm you up on a cold, rainy day. Instructions

1.Rinse the beans in cold water and place in a large pot with 1 1/2 gallons of water. Bring to a boil and simmer for about 2 hours until the beans are tender.
2.In a separate pot, brown the stew beef in some oil until it is well browned on all sides.
3.When the beef is browned, add it to the pot of beans along with the mexican-style hominy, onion, diced tomato, fresh green chile, chopped garlic, and tomato sauce.
4.Simmer for an additional 30 minutes, stirring occasionally.
5.Remove the onion, fresh green chile, and any large chunks of beef from the pot and discard. Add the chopped kale or greens, chicken bouillon granules, salt, and pepper to the pot.
6.Simmer for an additional 10 minutes or until the greens are wilted and tender. Stir in the chopped cilantro and serve hot.
