Ingredients

2 pounds beef short ribs
3 tablespoons soy sauce
4 cloves garlic , minced
2 teaspoons sesame oil
1 teaspoon ground black pepper
1/2 Korean radish ( mu ) , cut into 1-inch slices
1/2 onion
2 cloves garlic

4 ounces Korean glass noodles ( dangmyun )
2 scallions , sliced into 1-inch pieces
1 tablespoon cooked egg strips ( optional )
1/2 teaspoon toasted sesame seeds ( optional )
Galbitang is a traditional Korean soup that is often enjoyed on special occasions. This soup is made with beef short ribs and vegetables such as radish, onion, and garlic, making it a hearty and filling meal that is perfect for cold days. The beef short ribs are simmered for hours in a flavorful broth, resulting in tender and flavorful meat that falls off the bone. Instructions

1.Rinse the beef short ribs under cold running water and place them in a large pot.
2.Add enough water to cover the ribs, and bring to a boil over high heat.
3.Once boiling, reduce heat to low and simmer for 30 minutes.
4.Skim off any scum that may have risen to the top, then add 3 tablespoons of soy sauce, 4 cloves of minced garlic, 2 teaspoons of sesame oil, and 1 teaspoon of ground black pepper.
5.Add the sliced Korean radish, onion, garlic, and ginger. Cook for an additional 1-2 hours, or until the soup has reduced and the meat is tender.
6.While the soup is simmering, soak the Korean glass noodles in cold water for 20 minutes. Drain and cut into smaller pieces.
7.Once the soup is done, remove the beef short ribs and cut them into smaller pieces. Return the meat to the pot.
8.Add the glass noodles and scallions to the soup, and cook for an additional 5-10 minutes.
9.Serve hot, garnished with cooked egg strips and toasted sesame seeds (optional).
