Ingredients

4 cups sugar
2 cups water

2 slices lemons

1 cup semolina ( Greek simigthali )
1/8 cup unsalted butter , softened
4 eggs , well beaten
3 tablespoons vanilla extract ( or almond extract )
1 lb phyllo dough ( keep a damp cloth over the sheets while you work so it does n't dry out )
1 lb unsalted butter , melted , to brush on dough
Galaktoboureko is a classic Greek dessert made with a custard filling enclosed in phyllo dough. The custard is made with semolina, milk, sugar, and eggs, and flavored with vanilla or almond extract. The phyllo dough layers are buttered and baked until golden brown, creating a crispy exterior that complements the creamy filling. Instructions

1.Preheat the oven to 350°F.
2.In a large, shallow saucepan over medium-high heat, combine 4 cups of sugar, 2 cups of water, 1 cinnamon stick, and 2 slices of lemon. Bring to a boil, then reduce the heat and simmer for 10 minutes.
3.In a separate pot, bring 4 cups of milk to a simmer over low heat, then slowly add 1 cup of sugar and 1 cup of semolina, stirring constantly to prevent lumps from forming. Add the 1/8 cup of unsalted butter and continue to stir until the mixture thickens, about 10 minutes.
4.Remove the milk mixture from the heat and gradually add the 4 well-beaten eggs, stirring constantly to prevent curdling. Add 3 tablespoons of vanilla or almond extract and mix well.
5.Remove the cinnamon stick and lemon slices from the syrup. Brush a 9 x 13-inch baking pan with melted butter.
6.Layer 10 sheets of phyllo dough in the pan, brushing each sheet with melted butter.
7.Pour the milk mixture over the phyllo-layered pan and smooth it out to create an even layer.
8.Layer another 10 sheets of phyllo dough over the custard filling, again brushing each sheet with melted butter.
9.Cut the Galaktoboureko into serving pieces and bake for 1 hour or until golden brown.
