1 lb phyllo dough , defrosted according to package directions
1 cup clarified butter or 8 ounces unsalted butter , melted
2 cups water
1 1/2 cups sugar
1 lemon , rind of , cut into strips

Instructions

1.In a large saucepan, heat the milk until it comes to a boil.
2.In a separate bowl, whisk together the egg yolks and sugar until they turn pale yellow.
3.Slowly add the semolina, vanilla, and grated lemon zest to the egg mixture, whisking constantly.
4.Lower the heat and pour the egg mixture into the saucepan. Keep whisking on low heat until the mixture thickens to a custard-like consistency. Set aside and allow to cool.
5.Preheat your oven to 375°F and grease a 9x13-inch baking dish with melted butter.
6.Layer half of the phyllo dough sheets, brushing each layer with melted butter before adding the next. Pour the custard on the top layer and spread evenly.
7.Cover the custard with the remaining phyllo dough sheets, brushing each layer with butter.
8.Cut the Galaktoboureko into diamond shapes and bake in the oven for 45 minutes.
9.While the Galaktoboureko is cooking, prepare the syrup by boiling the water, sugar, and lemon rind strips together until the sugar dissolves and the mixture thickens.
10.As soon as the Galaktoboureko comes out of the oven, spoon the hot syrup all over it. Let it rest for 30 minutes before serving.
