6 eggs
1 cup sugar
1 1/2 cups fine semolina or 1 1/2 cups cream of wheat
8 cups milk
2 lemons , zest of , of grated

4 tablespoons butter
1 1/2 lbs phyllo pastry sheets
3/4 cup melted butter

Instructions

1.In a large bowl, beat the eggs and sugar together until light and creamy.
2.Gradually add in semolina flour and milk, whisking continuously.
3.Add grated lemon zest and vanilla extract, stir well.
4.Melt butter in a pan, add the mixture into the pan and cook over medium heat, whisking continuously until it gets thickened and creamy like custard.
5.Let it cool for a bit.
6.Preheat the oven to 375F (190C), butter and line a 13 X 9 (33 X 23 cm) baking dish.
7.Brush phyllo pastry sheets with melted butter, and lay 8 of them in the baking dish alternating them with the sheets hanging over the edges of the dish.
8.Pour the custard into the baking dish, fold the phyllo sheets over the custard, and brush the top layer with melted butter.
9.Bake the pie for 45 to 50 minutes or until golden brown.
10.In a saucepan, boil together sugar, water, and lemon juice.
11.Let it simmer for around 5 minutes or until it gets syrupy.
12.Pour the syrup over the hot pie, let it cool and then refrigerate for at least 2 hours.
13.Cut the pie and serve it chilled, garnished with crushed pistachios or dusted with powdered sugar.
