Ingredients

2 lbs pinto beans , dry
1 teaspoon vegetable oil
1 lb salt pork , shredded into small pieces
1 tablespoon chicken stock paste
6 roma tomatoes , blanched , peeled , and diced
24 ounces beer , like Bohemia or Negra Modelo
2 medium white onions , chopped
2 jalapeno chiles , large ones , fresh , seeded and chopped
2 tablespoons garlic , minced , fresh
2 tablespoons dry oregano
4 teaspoons ground cumin
1 red bell pepper , chopped
1 bunch cilantro , chopped fresh
Borracho means drunk in Spanish, which refers to the beer used in the recipe. These beans are a classic Mexican dish and are a staple at most family gatherings. They are made using pinto beans that are cooked in a beer-based sauce with lots of spices, vegetables, and salt pork. The recipe has been passed down through generations and is a hit with everyone who tries them. Instructions

1.Sort and wash the beans in cool water and set aside.
2.In a large pot or Dutch oven, heat the vegetable oil and sauté the salt pork until golden brown.
3.Add chicken stock paste to the pot, then add in the diced tomatoes, chopped onions, jalapenos, minced garlic, oregano, cumin, and chopped bell pepper. Stir the ingredients well.
4.Now add the beans to the pot, along with enough water to cover the beans by an inch. Bring the pot to a boil and then reduce the heat to a simmer.
5.Let the beans cook uncovered for about 3 hours, stirring occasionally until the beans are tender and the sauce has thickened.
6.Add the beer to the pot, simmer for another 15 minutes and then serve garnished with fresh cilantro.
