2 large baking potatoes

Instructions

1.Preheat the oven to 200C/400F/Gas 6
2.Cut the baking potatoes into wedges and season with salt and black pepper. Drizzle over a little olive oil, and toss to coat. Place on a baking tray and roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.
3.Season the sea bass fillets with salt and pepper.
4.Heat a little olive oil and butter in a frying pan over a medium-high heat. Add the sea bass fillets, skin-side down, and fry for 3-4 minutes, or until the skin is crispy and golden brown. Turn the fillets over and fry for a further 2-3 minutes, or until cooked through.
5.In a separate frying pan, heat a little olive oil. Add the cherry tomatoes and fry for 1-2 minutes, or until they are just starting to soften. Add the coriander and stir through.
6.To serve, place the sea bass fillets on a plate with some roasted potato wedges. Spoon over the cherry tomato mixture. Top with some cubed avocado, and sprinkle over the lime zest. Drizzle with extra virgin olive oil and serve with a wedge of lime.
