Instructions

1.Preheat oven to 375°F. Grease a 9x13 inch baking dish.
2.Heat the refried beans over medium heat until they are creamy and smooth.
3.Brown the chorizo over medium heat for 5-7 minutes.
4.Dip a tortilla into the enchilada sauce, turning it to coat both sides (about 1/4 cup per tortilla).
5.Add about 1/4 cup refried beans, 1/8 of the chorizo, and about 1/4 cup of shredded cheese onto the tortilla.
6.Roll up the burrito and place seam-side down in the baking dish. Repeat until all tortillas have been filled.
7.Pour remaining enchilada sauce over the burritos, ensuring they are fully covered.
8.Sprinkle with remaining shredded cheese.
9.Bake 25-30 minutes or until cheese is melted and burritos are heated through.
10.Let stand for 5 minutes before serving.
11.Optional: top with tomatoes, green onions, sour cream, or black olives.
