3 sheets nori
15 -20 large shrimp , cooked
3 imitation crab sticks
1/3 cup carrot , finely grated
1 small cucumber ( preferably Lebanese or Japanese )
1 avocado
2 leaves romaine lettuce
4 cups cooked rice , seasoned with sushi vinegar ( see # 315511 Easy Sushi Rice )
1/4 cup rice vinegar

Instructions

1.Cut the cucumber and avocado into thin sections. Slice the imitation crab sticks and the cooked shrimp lengthwise.
2.Place a sheet of nori onto a bamboo mat, shiny-side down. Dip your hands in cold water and take a handful of seasoned rice. Spread the rice gently over the nori until it's evenly spread out into a thin layer. Sprinkle some rice vinegar on the rice.
3.Arrange the sliced cucumber, imitation crab sticks, avocado, and shrimp along the edge of the rice closest to you in a horizontal row. Add a few matchsticks of grated carrot and lettuce leaves.
4.Lift the end of the mat closest to you and fold it over the ingredients, using the mat to help you roll the sushi tightly. Lift the mat a little and roll the sushi forward to completely seal the roll.
5.Repeat the process with the remaining nori sheets and ingredients. Slice the sushi into rounds using a sharp wet knife.
