2 lemon slices , 1/4-inch thick
3 tablespoons quick-cooking tapioca
1 cup sugar
2 tablespoons raisins
1 tablespoon dried currant
1 tart apple ( peeled , cored , cut into 1/2-inch thick slices )

Instructions

1.Combine the apricots, prunes, cinnamon stick, and lemon slices in a large saucepan. Add water and bring to a boil.
2.Reduce heat and let it simmer for 10-15 minutes, until the fruit is soft and plump.
3.Add the tapioca and continue simmering for 5-7 minutes, stirring occasionally until the tapioca is clear.
4.Stir in the sugar, raisins, currants, and apple slices. Cook for an additional 5 minutes, or until the apple slices are tender.
5.Remove the cinnamon stick and lemon slices and allow the soup to cool to room temperature. Chill in the fridge before serving cold.
