4 eggs , lightly beaten
1/2 cup evaporated milk
1/2 cup condensed milk
2 tablespoons Equal sugar substitute
439 g fruit cocktail , drained
3/4 cup sugar
3 tablespoons water

Instructions

1.Preheat the oven to 350°F (180°C).
2.In a mixing bowl, whisk together the eggs, evaporated milk, condensed milk and Equal sugar substitute.
3.Add the fruit cocktail into the mixture and mix until well combined.
4.In a small saucepan, mix sugar and water. Heat over low heat until the sugar is melted and caramel in color.
5.Pour the caramel into a 9-inch (23 cm) round cake pan and spread the melted caramel evenly.
6.Pour the egg mixture into the pan.
7.Cover the pan with aluminum foil and place in a larger baking dish with 1-inch (2.5 cm) water.
8.Place the baking dish in the preheated oven and bake for 1 hour.
9.Remove the pan from the oven and let it cool completely before refrigerating for at least 4 hours or overnight.
10.When ready to serve, run a knife around the outer edges of the pan and invert onto a serving plate.
