Ingredients

5 cups corn flakes
1 cup coconut
1/2 cup brown sugar , firmly packed
1 cup sultana ( golden raisins )
1 cup dates
1 cup self raising flour
185 g butter , melted
2 eggs , lightly beaten

Instructions

1.Preheat the oven to 180C.
2.Crush the cornflakes by hand or using a food processor.
3.In a mixing bowl, add the crushed cornflakes, coconut, brown sugar, sultanas, dates, flour and mix well.
4.In a separate bowl, beat the eggs and add melted butter, mix well and then add this to the dry mixture and mix until well combined.
5.Take a tablespoon of mixture and press lightly to shape into a small biscuit and place onto baking paper-lined trays.
6.Repeat until the mixture is used up, make sure to leave some space between the biscuits as they spread a little while cooking.
7.Bake for 20-25 minutes or until golden brown and cooked.
8.Remove from the oven and cool down on the trays for 5 minutes then transfer to a wire rack to cool fully.
9.Pro Tip: Do not overcook the biscuits as they will go too hard.
