1 eggplant
1 tablespoon white vinegar
2 tablespoons lemon juice

Instructions

1.Preheat the oven to 375°F.
2.Cut the eggplant in half, and using a fork prick the flesh all over.
3.Rub olive oil all over the eggplant and place them face-down on a baking tray.
4.Bake for 45-50 minutes or until the eggplant is soft.
5.Let it cool for 5 minutes and take off the skin from the eggplant.
6.Blend the eggplant, garlic, white vinegar, lemon juice, parsley, yogurt, cream cheese, and breadcrumbs until smooth.
7.Add the salt and pepper to taste.
8.Cover the bowl and refrigerate for 30 minutes to an hour to let all the flavors meld together.
9.Transfer it to a serving bowl and drizzle with a little olive oil before serving.
