8 pieces fresh pineapple
1/4 cup pineapple juice or 1/4 cup orange juice
3/4 cup shredded coconut , toasted
Frozen Pineapple on a Stick is a perfect refreshing summer snack that is easy to make and a favorite among all ages. Instructions

1.Cut the fresh pineapple slices into 1-inch cubes. Skewer each cube with a wooden stick and set aside.
2.Pour the pineapple juice or orange juice into a shallow dish and set aside.
3.Place the toasted shredded coconut into another shallow dish and set aside.
4.Dip each skewered pineapple cube in the juice and coat well.
5.Roll the pineapple in the toasted shredded coconut until coated well.
6.Place the skewered pineapple cubes on a baking sheet lined with parchment paper.
7.Freeze the pineapple cubes for at least 1 hour or until frozen solid.
