Instructions

1.Preheat oven to 180°C. Grease a 20cm round springform cake pan.
2.Combine melted butter and crushed biscuits in a bowl. Press mixture over base of prepared pan. Bake for 10 minutes or until light golden. Cool.
3.Meanwhile, whisk egg yolks, caster sugar and 1/2 cup marsala in a heatproof bowl over a saucepan of simmering water for 5 minutes or until thick and creamy. Remove from heat. Add cream cheese. Whisk until smooth. Cool completely.
4.Place ice cream in a large bowl. Set aside for 10 minutes or until slightly softened. Fold in cream cheese mixture until combined. Spoon ice cream mixture over biscuit base. Cover with plastic wrap. Freeze for at least 6 hours or until firm.
5.Meanwhile, melt butter in a saucepan over medium heat. Add brown sugar and marsala. Cook, stirring, for 5 minutes or until sauce thickens slightly. Stir in cream. Cook for 1 minute. Remove from heat. Cool.
6.Remove cheesecake from pan and place on a serving plate. Serve with warm marsala sauce.
