Ingredients

3 cups firm ripe raspberries ( about 40 total )
1 cup heavy cream ( or coconut cream to make vegan )
1/4 teaspoon pure vanilla extract
1 tablespoon confectioners ' sugar
1/2 lb dark chocolate chips
1/2 cup dark chocolate , covered cacao nibs ( or try using grated dark or bittersweet chocolate )
fleur de sel

Instructions

1.In a food processor, puree the raspberries until smooth. Then, pour the mixture through a fine sieve, pressing on the solids to extract as much juice as possible.
2.In a stand mixer, beat the heavy cream, vanilla extract, and confectioners’ sugar until stiff peaks form.
3.Gently fold in the raspberry puree.
4.Fill each mold with the raspberry cream mixture to about ¾ full.
5.Insert a popsicle stick in each mold.
6.Freeze them for at least 4 hours or until they are solid.
7.Melt the dark chocolate chips in a double boiler or in the microwave.
8.Dip each frozen raspberry bomb into the melted chocolate and roll them in the dark chocolate covered cacao nibs or grated dark chocolate before returning them to the freezer.
9.Sprinkle fleur de sel over the top before serving.
