2 eggs , beaten
1 cup crushed saltine crackers or 1 cup dry breadcrumbs
1/2 cup Catalina dressing
1/2 teaspoon white pepper
1 1/2 cups shredded cheddar cheese or 1 1/2 cups shredded colby cheese
2 cups hot mashed potatoes
1 egg , beaten
1/2 cup Miracle Whip
1/2 teaspoon salt or 1/2 teaspoon salt substitute

1 lb broiled mushroom

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.In a large bowl, combine beef or turkey, A.1. Original Sauce, onion, cilantro, eggs, crushed saltine crackers, Catalina dressing, and white pepper. Mix together well.
3.Form mixture into a loaf shape and place in a greased 9x13 inch baking dish.
4.Bake in preheated oven for 1 hour.
5.Meanwhile, combine the hot mashed potatoes, egg, Miracle Whip, salt or salt substitute, and paprika. Mix together well.
6.Spread the mixture over the top of the cooked meatloaf.
7.Top with shredded cheddar or colby cheese.
8.Place broiled mushrooms on top of cheese.
9.Return dish to oven and bake for another 15 to 20 minutes, or until cheese is melted and bubbly.
