Ingredients

thumb long ginger
5 tablespoons grams flour
10 -12 pods garlic
3/4 cup curds
4 -5 green chili peppers
2 -3 kashmiri red chili
1 teaspoon cumin
4 -6 curry leaves
garnish coriander leaves
1 pinch salt
2 tablespoons oil
1 teaspoon fenugreek seeds
2 -3 cloves
1 stick cinnamon
turmeric powder , - 1tsp
1 pinch baking soda
finely chopped small quantity of ginger and onion
1 cup black gram ( udad dal )
Fritter Curry or Kadhi Wada is a popular dish from the western Indian state of Gujarat. The dish has variations in different parts of the country, but the core ingredients remain the same. The crispy fritters are made with gram flour, water, and spices, while the kadhi is made with curd, gram flour, and spices. The combination of crispy fritters and rich kadhi is a treat for the taste buds.

Instructions

1.First, wash and soak black gram or udad dal in water for at least 4-5 hours.
2.After that, rinse the soaked dal and grind it with ginger, garlic, green chilies, 1/2 tsp cumin seeds, salt, and water to make a smooth batter.
3.Add baking soda to the batter and mix well, then heat oil in a deep pan.
4.Take a small amount of batter in your hand and flatten it, then slide it into the hot oil.
5.Fry the fritters until they turn golden brown and crisp, then transfer them to a plate.
6.Meanwhile, to make kadhi, whisk curd in a bowl until it is smooth then add a cup of water.
7.In a separate pan, heat oil and add fenugreek seeds, cumin seeds, cinnamon, cloves, red chilies, curry leaves, and chopped ginger and onion.
8.Fry the spices for 2-3 minutes and then add the curd mixture.
9.Add turmeric powder, salt, and gram flour, and cook for another 10-15 minutes until the kadhi thickens.
10.Add the fritters to the kadhi, garnish with coriander leaves, and serve hot with rice or roti.
