Ingredients

1 kg mussels , already clean
16 small crackers , called friselle
500 g cherry tomatoes
1 bunch fresh basil
1 garlic clove
1 bunch fresh parsley
2 tablespoons dried oregano , siciliano
1/2 glass white wine
extra virgin olive oil
salt and pepper

Instructions

1.Add a little bit of olive oil to a large pot and heat it on medium-high heat.
2.Once heated, add minced garlic, chopped parsley, and oregano. Stir and let cook for 1 minute.
3.Add cherry tomatoes, salt, and pepper to the pot and let them cook for about 5 minutes.
4.Add the cleaned mussels to the pot and pour in white wine. Give the pot a good stir and then cover with a lid. Cook the mussels until they have all opened, which should take about 5-8 minutes.
5.While the mussels cook, soak the friselle in water for a minute or so to soften them up a bit. Once they are soft enough to your liking, remove them from the water and place them on a plate.
6.Once the mussels are cooked, carefully discard any mussels that didn't open. Then, spoon the remaining mussels, tomatoes, and sauce on top of the friselle.
7.Drizzle some extra virgin olive oil and sprinkle fresh basil on top of the friselle to enhance the flavors. Enjoy!
