Ingredients

4 cups cooked pinto beans , undrained ( canned pinto beans can be used )
1/4 cup chopped onion
1 small finely chopped jalapeno , deseeded
1/4 cup lard ( cooking oil can be used also ) or 1/4 cup butter ( cooking oil can be used also )
salt , to taste
pepper , to taste
8 ounces queso blanco , grated

Instructions

1.In a skillet, add the lard or cooking oil and heat over medium heat.
2.Add the chopped onions and jalapenos and cook until tender and translucent, stirring occasionally.
3.Add cooked beans and their liquid to the skillet and mix well with the onions and jalapenos using a potato masher.
4.Once the beans are well mashed with the other ingredients and heated through, season with salt and pepper according to your taste.
5.Sprinkle grated queso blanco over the top, cover the skillet, and cook until the cheese has melted and the beans are bubbling hot, about 2-3 minutes.
