Instructions

1.Rinse and clean the pinto beans, then add them to a large pot.
2.Add the ham hock, water, shredded carrot, and 1/2 teaspoon of salt to the pot. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the beans are tender.
3.While the beans are cooking, heat the vegetable oil in a skillet over medium heat. Add the green plantain and fry until golden brown, then remove from the skillet and set aside.
