1 lb dried pinto bean
8 slices bacon , chopped
2 garlic cloves
4 medium fresh tomatoes , diced
2 medium onions , diced
2 cups ham , chopped
2 cups smoked sausage ( optional , chopped )
1 can beer ( chef 's choice )
1 bunch fresh cilantro , chopped
3 fresh green jalapeno peppers , diced

Instructions

1.Rinse and sort the dry pinto beans in a colander.
2.Cook chopped bacon in a medium to large pot over medium heat until crispy.

4.Add the diced tomatoes and cook for 5-8 minutes, stirring occasionally.
5.Add the rinsed beans to the pot and cover with water or chicken stock.
6.Add the can of beer to the pot.

9.Once the beans are tender, add the chopped ham and diced jalapenos and let it simmer for another 15-20 minutes.
10.Before serving, sprinkle chopped cilantro on top.
