Frijoles Borrachitos, or Refried Beans with Beer, are a traditional Mexican dish that has been adapted with the addition of Guinness Stout. It's a hearty and delicious side dish that pairs well with any Mexican-inspired main course. The dish is made by sautéing onions, garlic, and jalapenos, then adding in three types of beans and the rich stout. The ingredients simmer together until the beans are cooked and flavorful. The beans are then mashed and continue to cook until they reach a desired consistency. The dish is usually served topped with cheese, sour cream, avocado, or cilantro.

.In a large skillet, heat the canola oil over medium-high heat.
.Add the jalapenos, onion, and garlic, and sauté for about 5 minutes, until the vegetables start to soften.
.Drain and rinse all the beans and add them to the skillet, along with the cumin.
.Slowly pour in the Guinness, starting with 12 ounces and adding more as needed, until the beans are fully covered.
.Bring the mixture to a boil, then reduce the heat to low and let simmer for about 30 minutes, stirring occasionally.
.Using a potato masher or fork, mash the beans until they are roughly mashed.
.Continue to cook over low heat until the mixture reaches your desired consistency, adding more Guinness or salt as needed.
