12 fresh zucchini blossoms
3/4 cup soft goat cheese at room temperature
1 egg yolk
1/4 cup shredded Gruyere cheese
1 pinch freshly ground black pepper , or to taste
1 pinch cayenne pepper
Batter :
1 cup self-rising flour
1/2 cup cornstarch
1/4 cup ice-cold water , or as needed
vegetable oil for frying
1 teaspoon all-purpose flour , or as needed

Instructions

1.Gently wash the squash blossoms in cold water and carefully remove the stamen from each flower.

5.In a large pot, heat the vegetable oil over medium-high heat. When the oil is hot, dip each stuffed blossom in the batter and shake off any excess.
6.Carefully place the battered blossom in the hot oil and fry until golden brown, turning it once.
7.Remove from the oil with a slotted spoon and drain on paper towels. Serve immediately.
