Ingredients

4 mozzarella cheese slices , fairly thick slices ( fresh mozarella )
2 eggs , beaten
1/3 cup flour
1 cup breadcrumbs
3 tablespoons olive oil

4 cups spring greens , 1 cup per person ( I use a bag of spring , mesculin , or buttery greens for this dish )

1 tablespoon white wine vinegar
1 teaspoon Dijon mustard

Instructions

1.Preheat oven to 450 degrees F.
