Ingredients

16 slices whole wheat bread , toasted lightly
1 1/2 lbs fresh mozzarella cheese , drained and sliced
1 quart vegetable oil , for frying
4 large eggs
1/4 cup milk
1 teaspoon salt
ground black pepper
1 cup all-purpose flour
5 tablespoons olive oil
4 garlic cloves , peeled and crushed
8 anchovy fillets
3 tablespoons small capers , drained
3 tablespoons lemon juice
1/3 cup dry white wine
1/4 cup chicken stock
2 tablespoons chopped parsley
Fried Mozzarella Sandwich Skewers are a delicious appetizer with an Italian twist. A perfect snack for the evenings to indulge in some cheesy goodness, these skewers are made by sandwiching mozzarella cheese between sliced bread, then battering and frying until crispy golden brown. Instructions

1.Cut each slice of bread into 4 equal parts, and then cut off the crusts.
2.Place the mozzarella cheese over each slice of bread and top with another slice of bread.
3.Cut each sandwich into 4 triangles and slide onto skewers.
4.In a bowl, whisk the eggs with the milk, salt and pepper and set aside.
5.In a separate bowl, mix the flour with salt and pepper and set aside.
6.In a frying pan heat the vegetable oil.
7.Dredge the skewers in the flour mixture, then dip in egg mixture and add it into the hot oil for frying.
8.Fry until golden brown, about 2-3 minutes, then drain on paper towels.
9.To make the sauce, heat 5 tablespoons of olive oil in a pan over medium heat and add garlic cloves. Fry for 1 minute until fragrant.
10.Add the anchovy fillets and capers, cook for 2 minutes stirring occasionally.
11.Add the wine and stock, boil for 2 minutes then remove from heat and add lemon juice and chopped parsley.
