6 yukon gold potatoes , medium size , cut into large dice
8 ounces thick sliced bacon , cut into pieces
canola oil
salt & freshly ground black pepper
1/2 red onion , diced
2 tablespoons capers , drained

3 tablespoons extra virgin olive oil

Instructions

8.Add the bacon back to the skillet and adjust seasoning to taste. Serve warm.
