1 pound skinless , boneless chicken breast meat - cut into chunks
1/2 cup dark rum
1/2 cup lemon juice
1/2 cup minced garlic
1/4 cup Worcestershire sauce
3 tablespoons garlic powder
1 teaspoon adobo seasoning
1 teaspoon onion powder
1 teaspoon ground black pepper
1 teaspoon ground coriander
2 ( .18 ounce ) packets sazon with coriander and achiote
3 cups all-purpose flour
4 cups corn oil for frying

Instructions

1.In a large bowl, whisk together the dark rum, lemon juice, minced garlic, Worcestershire sauce, garlic powder, adobo seasoning, onion powder, black pepper, coriander, and sazon seasoning.
2.Add the chicken chunks to the marinade and toss to coat. Cover the bowl and refrigerate overnight.
3.The next day, remove the chicken from the marinade and discard any excess.
4.In a large deep skillet or Dutch oven, heat the corn oil over medium-high heat to 350 F (175 C).
5.Place 3 cups of flour in a shallow dish and coat each chicken chunk with the flour, shaking off any excess.
6.Working in batches, add the chicken to the hot oil and fry until golden brown for about 5 to 7 minutes. Drain on paper towels and repeat with the remaining chicken chunks.
7.Serve hot and enjoy!
