1 lemon , halved
12 baby artichokes
3 cups olive oil
1/3 cup flour
1 teaspoon garlic powder
1 teaspoon onion powder

Instructions

1.Fill a large bowl with cold water, and squeeze the lemon juice into it. Leave the squeezed halves in the bowl.
2.Peel away the tough outer leaves of each artichoke until you get to the tender inner leaves. Cut off the top inch of each artichoke, slice the artichokes into quarters, and dunk them in the lemon water to prevent browning.
3.Heat the olive oil in a deep, heavy-bottomed skillet over medium-high heat. (Test the temperature by flicking a bit of flour into the oil. It should sizzle.)
4.In a separate bowl, mix together the flour, garlic powder, onion powder, Italian seasoning, and a teaspoon of sea salt. Dredge the artichoke quarters in the flour mixture, shaking off any excess powder, and carefully place them in the oil.
5.Fry the artichokes until they're golden brown and tender, 5 to 7 minutes, turning with a slotted spoon as needed. Remove the artichokes with the slotted spoon and place them on a paper towel-lined plate to drain off the excess oil. Lightly salt and serve hot.
