8 large shrimp , peeled and deveined ( prawns )
1 ounce cellophane noodle
1 cup boiling water
1/2 cup shredded carrot
1/4 cup peeled seeded and julienne cucumber

4 rice paper , rounds 8 inches in diameter

2 tablespoons hoisin sauce
fresh lime juice
1 1/2 teaspoons fish sauce
1 1/2 teaspoons unsalted natural-style peanut butter
1/4 teaspoon red pepper flakes
1 pinch brown sugar
