500 g potatoes

1 garlic clove , peeled and chopped
2 tablespoons coriander , chopped
3 shallots or 3 green onions , thinly sliced
1 egg , beaten
2 cm piece fresh ginger , grated
1 teaspoon lime rind , grated
salt
2 cups breadcrumbs
3/4 cup flour
1 egg , beaten extra
2 tablespoons milk
olive oil , for shallow frying

Instructions

1.Peel the potatoes and cut them into large chunks. Boil them in salted water for 20-25 minutes, until tender.
2.Drain the potatoes and transfer them to a large bowl. Mash them with a potato masher or fork.
3.Cut the salmon into bite-sized pieces. In a separate bowl, mix together the salmon, garlic, coriander, shallots/green onions, beaten egg, grated ginger, grated lime rind, and a pinch of salt.
4.Add the salmon mixture to the mashed potatoes and mix together gently until well combined.
5.Line a baking tray with baking paper. Shape the salmon mixture into small patties, each about 2-3cm thick and 7cm in diameter.
6.In separate shallow bowls, place the breadcrumbs and flour. In a third bowl, whisk together the extra beaten egg and milk. Dip each salmon patty first in the flour, then in the egg mixture, and finally in the breadcrumbs, ensuring the patty is coated evenly.
7.Heat enough olive oil in a large frying pan over medium-high heat to shallow fry the salmon patties, in batches, for approximately 2-3 minutes on each side, or until they are golden brown and cooked through. Drain on a paper towel before serving.
