4 tablespoons salt

1 tablespoon garlic powder ( or granulated )
1 tablespoon paprika
1 teaspoon allspice
1 teaspoon ground marjoram
2 cups ice water
1 package wolfson salted natural hog casings

Instructions

1.In a large mixing bowl, combine the ground pork butt or pork shoulder with salt, pepper, coriander, garlic powder, paprika, allspice, and marjoram. Mix well.
2.Add 2 cups of ice water to the mixture and knead thoroughly to incorporate the water.
3.Take out the wolfson salted natural hog casings from the package and rinse them thoroughly. Soak them in warm water for a few minutes before using.
4.Stuff the sausage mixture into the hog casings, twisting and tying them to form individual links.
5.Heat a large skillet over medium-high heat. Add enough water to cover the sausages and bring to a boil. Reduce heat and simmer for 20-30 minutes until the temperature of the sausage reaches 160°F.
6.Serve the fresh Polish kielbasa hot with your favorite sides, or refrigerate or freeze for later use.
