Ingredients

1/2 cup brown sugar
1/4 cup canola oil
1 egg
1/2 cup almond milk ( or other milk , maybe rice milk )
3/4 cup brown rice flour
1/4 cup rice flour
1/4 cup tapioca starch
1/4 cup potato starch
3/4 teaspoon guar gum
2 teaspoons gluten free baking powder
1/4 teaspoon sea salt
2 cups fresh sliced peaches
1/2 cup white sugar
1/3 cup brown rice flour
1 teaspoon cinnamon
1/4 cup blanched slivered almond
1/4 cup canola oil
Fresh Peach Cake is a delicious gluten-free dessert that can be enjoyed during the summer months when peaches are in season. Instructions

1.Preheat the oven to 375°F (190°C) and grease a 9” (23 cm) cake pan.
2.In a large mixing bowl, mix the brown sugar and canola oil together until well combined.
3.Beat in the egg and almond milk until smooth.
4.In another bowl, combine the brown rice flour, rice flour, tapioca starch, potato starch, guar gum, baking powder and salt.
5.Slowly add the dry ingredients to the wet mixture and stir until well combined.
6.Fold in the sliced peaches.
7.Pour the mixture evenly into the prepared cake pan.
8.In a separate bowl, mix the white sugar, brown rice flour, cinnamon, almond slivers and canola oil together.
9.Sprinkle this crumble mixture on top of the cake mixture.
10.Bake for 35-40 minutes or until a toothpick comes out clean when inserted.
