1 stalk lemongrass , bottom 4-inches minced ( about 1 tablespoon and can sub grated lemon zest but not exactly the same )
2 walnut-sized shallots , thinly sliced

Instructions

1.In a small bowl, mix cornstarch and fish sauce until smooth
2.In another bowl, mix lemon juice, black pepper, and sugar
3.Coat the beef with the cornstarch and fish sauce mixture
4.Heat up a large skillet with vegetable oil and butter over high heat
5.Add beef and stir-fry until medium-done
6.Remove the beef and set aside. Add garlic, lemongrass, and shallots to the skillet and stir-fry for a couple of minutes until fragrant
7.Add the beef back to the skillet, pour in the lemon juice mixture, and stir-fry for another minute
8.Serve immediately with rice or noodles
