Ingredients

1 1/2 teaspoons citric acid , powder
6 quarts raw grass fed organic whole milk
1/4 teaspoon liquid rennet
2 -3 tablespoons kosher salt

Instructions

1.Dissolve citric acid in 1 cup of cool water and set aside.
2.Pour the milk into a large pot, add in the dissolved citric acid and mix thoroughly.
3.Heat the mixture for about 10-15 minutes until the temperature reaches around 90°F.
4.Add rennet to 1/4 cup cool water and mix well. Add to the mixture and stir for around 30 seconds.
5.Turn off the heat and allow the mixture to rest for 10-15 minutes until it forms curd.
6.Using a curd knife or long knife, cut the curd into 1-inch pieces and let rest for 5 minutes.
7.Place the pot back on the stove and heat at medium heat for 5 minutes. Stir gently.
8.Drain the whey and transfer the curd to a microwave-safe bowl and microwave on high for 1 minute. Mix and microwave again for 30 seconds.
9.Add salt and mix well. Gently stretch and fold the cheese to create a smooth texture. Submerge in cold water for a minute. Squeeze out excess water and stretch it one more time. Serve or place in the fridge for later use.
