20 -24 asparagus spears , green ( preferably sizeable ones )
1/2 teaspoon salt
1/4 teaspoon sugar ( a pinch , as we used to call it )
3 1/4 ounces butter
12 ounces smoked trout ( or other smoked fish fillets , try to buy 4 )
ground nutmeg ( to garnish ) ( optional )

Instructions

1.Rinse the asparagus spears under cold water and snap off the woody ends.
2.In a saucepan, bring 2 cups of water to a boil and add salt and sugar.
3.Blanch the asparagus spears in the boiling water for about 2-3 minutes until just tender.
4.Drain and rinse the asparagus under cold water immediately to stop the cooking process.
5.Melt butter in a pan until it starts to sizzle. Add smoked fish fillets and gently heat on each side for about 2 minutes to warm them up.
6.Place smoked fish fillets on a plate, arrange blanched asparagus spears on top and sprinkle with ground nutmeg.
7.Serve hot and enjoy!
