1 sharp eating apple , cored , peeled , and chopped
2 bay leaves
1 teaspoon chopped fresh dill
2 teaspoons pickled cucumber juice or 2 teaspoons lemon juice
salt & freshly ground black pepper
fresh herb , to garnish
sour cream , to serve ( optional )
black bread , to serve ( optional )

Instructions

1.Peel and dice the turnip and carrots
2.In a large pot, heat the butter or oil over medium heat
3.Add the sliced onion and celery and sauté until softened
4.Add the turnip and carrots to the pot and continue to sauté for a few minutes
5.Cut the cabbage into small pieces and add it to the pot
6.Pour in the vegetable stock and add the chopped apple, bay leaves, dill, and pickled cucumber or lemon juice
7.Season with salt and black pepper to taste
8.Bring the soup to a boil then reduce the heat and simmer for 30 minutes
9.Garnish with fresh herbs and serve with optional sour cream and black bread
