Ingredients

2 slices cinnamon-raisin bread , cubed without the crusts
1 egg
1/2 cup refrigerated french vanilla non-dairy coffee creamer ( or mix up some from a powdered mix )
2 caramels , cubes cut into pieces ( one for each custard cup )
1 tablespoon chopped pecans
1/4 teaspoon cinnamon
1 tablespoon butter

Instructions

1.Preheat the oven to 350°F.
2.Grease two 6 oz. custard cups with butter.
3.Cut the crusts off of two slices of cinnamon-raisin bread and cube the bread.
4.In a bowl, whisk together egg and french vanilla non-dairy coffee creamer.
5.Add cubed bread to the egg mixture and let it sit for 10 minutes.
6.In each custard cup, place a cubed caramel and 1/2 tablespoon of chopped pecans on top.
7.Pour bread mixture evenly into each custard cup.
8.Sprinkle 1/4 teaspoon of cinnamon on top of each custard cup.
9.Cut a small piece of butter and place it on top of the custard cup.
10.Place custard cups in a baking dish and pour hot water in the dish until it reaches halfway up the custard cups.
11.Bake for 35-40 minutes or until bread pudding is set.
12.Let cool for 5 minutes before serving.
